Driving northeast on U.S. 67 through Erath County in June, I saw hundreds of cows meandering through sun-dappled live oak groves, napping under pecan trees, and swishing their tails next to rushing creeks. Do they even know, I thought, that some of their fellow herds in this state live on dusty patches of scorched earth? As I turned down the gravel road toward the Veldhuizen Cheese farmstead, several calves blinked at me, seemingly unaware of anything other than the crunch of my tires, which had interrupted their siestas.
