In February, I shot and killed my first deer and feral hog while participating in the Texas Wildlife Association’s Adult Learn to Hunt Program. Each meal that we students and our mentors ate during those three days—boar stew, venison bolognese, and venison breakfast tacos, to name a few—was made from game harvested from previous hunts, and they were all delicious. We learned how to field dress and butcher our kills, so I went home with two coolers’ worth of meat, excited to cook my haul.
