A decade ago, I called the brisket at Red Wagon BBQ Waco’s best in a review of the joint. A lot changed in the city’s barbecue scene over the last ten years, including the appearance of a couple Top 50 Joints. Guess Family Barbecue came to town the following year, then closed its storefront in 2025; and Helberg Barbecue opened in 2018 before moving out to Woodway, about six miles southwest, the following year.
