I would order at the counter and watch as owner and pitmaster Billy McDonald placed a bun on the griddle to warm up while he sliced a hunk off a brisket that glowed red under a heat lamp. He made sure to get some of the bark, and he chopped the meat finely on the block before he transferred it to the bread, finally setting the sandwich on a plate next to a bowl of warm barbecue sauce.
