A Daughter Keeps the Flame Going at Her Father’s Historic Barbecue Joint
Gerald Birkelbach’s name is printed on a stack of business cards sitting next to the cash register at City Meat Market, in Giddings. He was the longtime owner who died suddenly just over five years ago. Birkelbach’s daughter, Brooke Kovar, and her husband, Chris, are the new owners of this barbecue joint, midway between Austin and College Station on State Highway 290. They left the cards there as a tribute and because Brooke’s late father taught her to be frugal. She found a stash of them after his death. “I promise you there were about 100,000 business cards in that box,” she told me.
